Ingredients
1/2cupbutter
2-3clovesgarlicminced
1/2Tbsalt
1/2cupflour
3cupshalf & half
2TbItalian seasoning
2/3cupgrated Parmesan cheese
Instructions
In a medium saucepan, melt butter over low heat.
Turn heat up to medium and add minced garlic. Whisk for 1-2 minutes, until aromatic but not browned.
Quickly stir in salt and flour to make a roux, then slowly add half & half while whisking.
Add Italian seasoning and Parmesan cheese. Continue whisking, making sure to scrape the bottom corners of the pan where the cheese will try to collect.
Simmer until thickened to desired consistency (see note below).
Notes
If using this sauce to pour directly over pasta and serve, allow the sauce to thicken quite a bit. If using it in a dish that will be baked (such as lasagna), allow to thicken slightly but not completely. It will finish thickening during baking.If the sauce ends up too thick, add a little more half and half.This recipe makes enough sauce for a pound of pasta or a 9x13 pan.
